What is Specialty Coffee?

 

Commander Coffee is a specialty coffee roastery. 


Now, you might be wondering what exactly that means… The Specialty Coffee Association (SCA) defines specialty coffee as “a coffee or coffee experience that is recognized for its distinctive attributes, resulting in a significantly higher value within the marketplace.” 


For us at Commander Coffee, this means each coffee is roasted with incredible attention to detail through the whole roasting process, from the green coffee bean coming from the farm to the perfectly roasted bean ready to be brewed. 


The SCA also states that “specialty coffee represents a commitment to quality, fair trade, and ethical sourcing.” If you look closely at the labels on each of our coffee bags, there are various certifications including fair trade certified and rainforest alliance certified.*

Rainforest Alliance Certified: A commitment to better farmer livelihoods, human rights, environmentally friendly practices, and climate resilience.

Fair Trade Certified: A rigorous and globally recognized sustainable sourcing model that improves livelihoods, protects the environment, and builds resilient, transparent supply chains.

Regenerative Organic Certified: Farms and products meet the highest standards in the world for soil health, animal welfare, and farmworker fairness.

Roasting Practices

  • Whole Bean Coffee: All our coffee is whole bean (unless requested otherwise) to maintain freshness.

  • 100% Arabica Coffee: All our coffee is 100% Arabica Coffee, which is valued for its high quality and complex flavors.

  • Traceability: Each Single Origin coffee is clearly labeled on both the bag itself and within our website online.

  • Roast Date: Each roast date is written clearly on the back of our bags. After 2 weeks, the coffee isn’t at its max freshness date, so we’ll pull that from our shelves and restock freshly roasted coffees.

It starts with the beans. Specialty coffee uses higher quality beans, started with the farms themselves. At Commander Coffee, we offer a variety of Single Origins that have a variety of processing methods depending on the origins. The overall quality and traceability of our coffee is constantly being improved and worked on through both the roaster and the growers.

Part of being a Specialty Coffee Roastery means having specialty coffee training. Each of our staff members go through extensive specialty coffee training, including having a wide knowledge of coffee origins and processing methods, brewing techniques and extraction variables, roast profiles, proper milk texturing for milk based drinks, and equipment maintenance.
